Wayan is a Belgian-style Saison brewed by Birrificio Le Baladin, and for the purposes of this craft beer review, the ale was served in a tumbler from a bottle.
Appearance
The ale pours a cloudy straw and is topped by a finger-thick cap of loose, bubbly white froth that dissipates rapidly. The reduction doesn’t leave behind any lace or residue.
Aroma
The aroma is sweet with a mix of fruits and spices.
Flavor
Flavors of tart citrus and doughy bread lead the palate to a gently spiced finish of pepper and coriander. A sweet taste of peach undercuts the finish while a wheat base ties the palate together.
Mouthfeel
Its feel is smooth and somewhat prickly with a light body and a little less-than-moderate carbonation.
Overall
As a Saison, Wayan should have more retention in its appearance and more carbonation in its feel. Its palate is pleasantly fruity with its balance of spices. Although its use of yeast is very subtle. It’s not perfect, but Wayan is a really easy drinking, refreshing beer.
Recommended Pairings
Baladin recommends the following food pairings with its Wayan Saison: shellfish and fish, white meat, and fresh cheeses.
