The Ox is a Belgian-style Saison brewed by Holy Mountain Brewing Company, and for the purposes of this craft beer review, the ale was served in a tulip glass from a bottle.
Appearance
Pours a cloudy orange-gold with an inch-thick head of soapy, white froth that fizzes away rapidly. Lace doesn’t appear on the glass; a steady stream of bubbles rises to the top.
Aroma
Aroma is faint but previews funky Brettanomyces and a hint of citrus.
Flavor
The taste follows the nose but features a lot more pop with a lack of sweetness that allows the citrus and yeast to drive the flavor. Lemon and orange fuse with Brett for a tangy palate that approaches a wild ale. Finishes dryly with an astringent bite of lemon juice cresting atop a drop of honey. The bitterness lingers momentarily.
Mouthfeel
Mouthfeel is crisp and effervescent with a medium body and medium-high carbonation.
Overall
The Ox is an amazing brew. This saison is light and refreshing with a lively feel. Its flavors just dance on the tongue. Though lofty in price, this is a great summer ale and most definitely worth a try.
