La Résolution is a Belgian-style Strong Dark Ale brewed by Unibroue, and for the purposes of this craft beer review, the ale was served in a tulip glass from a bottle.
The ale pours a mahogany hue and is topped by a thin, cream-colored head that dissipates rapidly. No lace is left behind on the glass.
The aroma is decidedly sweet with dark fruits, caramel, and molasses.
Big sweet flavors of fig, raisin, cherry, and caramel are balanced by booze and spices.
The feel has a relatively smooth body with a medium-full body and moderately-high carbonation. Finishes with a warming sensation from the alcohol.
La Résolution leans malty with its sweetly decadent palate. But it does find some balance from its spices and alcohol. Overall, a satisfying dark ale.
Unibroue recommends the following food pairings with their La Résolution Belgian Strong Dark Ale: fondue, spicy food; black cod and halibut; semi-soft washed rind cheese; sweets of bittersweet chocolate, carrot cake, chocolate mousse, and gingerbread.
