What You Need to Know
The 75 Minute IPA is a variant of the brewery’s original 90 Minute IPA featuring dry-hopped Cascade hops and brewed with maple syrup. So how was it? Let’s get to the review.
Appearance
The IPA pours a slightly hazy deep golden hue and is topped by a thick cap of soapy off-white foam that shows good retention. The head’s reduction leaves a few droplets of residue on the glass.

The aroma is strong with a hoppy scent that’s predominantly piney. There’s also some citrus as well and a little baked bread. Once the beer loses its chill, the maple syrup asserts itself.
Flavor
The palate is led by a taste of lightly baked bread that gently rises to a modest bite of orange citrus and floral hop flavors. Their bitterness lingers briefly beyond the finish while maple syrup subtly sweetens the base.

Mouthfeel
The feel has a rounded draw with a smooth draw and a slightly dry finish. The body is medium with matching carbonation. The bitterness is less than moderate.
Overall
The presentation for the 75 Minute IPA isn’t particularly impressive but that’s nitpicking. The aroma is strong and pleasant and the feel is spot on. Thankfully, the maple syrup is subdued and the hops are given the space expected of the style.
Recommended Pairings
Dogfish Head Craft Brewery recommends burgers, grilled meats, and avocado as food pairings with their 75 Minute IPA.
