The Fermentorium

This is the foundation of every beer brewed at The Fermentorium. In name, Fermentorium essentially translates to “a place of fermentation.” And while Latin-ish sounding, honestly, it’s probably imagined. Regardless of Latin origin accuracy, something about the name stuck with founder, Kristopher Volkman.

The brainchild of the locally-raised homebrewer, The Fermentorium opened its doors early in 2016. Currently offering 24 beers on tap, the brewery also distributes to restaurants and bars all over Southeastern Wisconsin.

History

The concept of the brewery dates back to 2007, the roots of which first grew in Kristopher’s humble backyard home garden.

Inspired by the idea of 1890s elixir carts — and the somewhat eccentric alchemists who piloted them — The Fermentorium was originally envisioned as a three barrel brewery which would focus on mixed fermentation and foraged ingredients, in true farm-to-table fashion. Kristopher even picked out the exact farmhouse he was going to purchase and convert into a brewery.

The culmination of this idea evolved, but has not been forgotten.

What began as a hobby, turned to love, and in time (plus a few conferences, seminars and classes later), the vision evolved into what is now — The Fermentorium Beverage Company.

After years of home brewing experimentation and the complete renovation of a former retail space, The Fermentorium found its first home in Cedarburg Wisconsin, and opened its doors to the public on January 28, 2016 as a 20 barrel craft brewing facility.

Among the first craft beer taprooms and breweries to open in the Ozaukee county area, The Fermentorium proudly features 24-plus brews on tap.

Our taps always include at least a few unique machinations from the mind of the head brewer. The Fermentorium is known for its flagship brew — Juice Packets — and can be found across the state of Wisconsin in both cans and on draft.

Cedarburg Tasting Room

Here at The Fermentorium not only do we craft innovative beers but also innovative space. With over 2,500 sq. ft., we’ve created a haven for you and your closest friends to sample amazing beer while enjoying each other’s company. Your room comes fully equipped with twenty-four taps dispensing a bountiful amount of styles, some familiar and some crafted for exploration…but all from Wisconsin. A long bar made of ambrosia maple beckons you up with knowledgeable beer specialists ready to customize your craft beer experience. Seating is abundant and offers views of inside the brewery or you can peruse around the perimeter taking in the art wall gallery. Those looking for more action can grab a classic game from our cabinet or head into our production/event space for a round of bags or pool.

If you decide you love our brewery just as much as we do, there is a fully stocked merch area and large to-go beer cooler that will allow a piece of us to travel home with you.

Wauwatosa Barrel House

Have a beer with us in Wauwatosa! The Fermentorium Barrel House opened in May 2019 as an extension of our brewery & taproom in Cedarburg. With 24 taplines, packaged beer to take home, and exclusive Barrel House-only beers, we’re proud to call this location our home away from home.
